Full of it: Jammy Filled Cupcakes!


I’m nothing if not efficient when it comes to all things desert!  My hubby learned years ago not to leave me alone with chocolate, cookies, cakes (anything sweet really) and expect it to still be there in a week’s time.   You snooze you lose honey!  Easter eggs, birthday cake, goners!  In my defence, who the hell saves their Easter Eggs for over a month?  Craziness!

In recent year’s hubby has taken to hiding chocolate in little hidey holes around the house (preferably up high…he’s tall, I’m short…it works) especially the goodies he brings back from Zurich.  This time around it was jam and honey from the farm and out of the goodness of my heart (and after I had already emptied the better part of two jars of jam) I decided baking with jam would give the rest of the family a fighting chance of getting their share.  I baked the Thumbprint cookies last week and this week it was Cupcakes.

These are super easy to do and the variations are endless!

Jammy Cupcakes

Ingredients

–  Vanilla Cupcakes (try the cupcake recipe in my butterfly cakes post if you like)

–  A Sharp knife

–  Jam

–  100g (1 stick) of butter, softened

–  200g (1 and a half cups + 6 tablespoons) icing/confectioners sugar

–  A few Tablespoons of milk

Method

1/  Bake your cupcakes and allow to cool

2/  In a bowl make your butter cream icing.  Beat the butter until smooth and then add the icing sugar and 2 Tablespoons of milk.  Mix together until smooth.  If too stiff then add a little more milk, if too runny add a little more icing sugar and stir until you have the right consistency

2/  Once your cupcakes are completely cooled cut a triangle shape in the middle and gently lift out

3/  Gently drop about 3/4 of a teaspoon of jam into the hole

5/  Put your little slither of cake back on (trim a little off if it doesn’t fit back in easily)

6/  Ice/Frost your cupcake as normal and decorate with a little jam if you like

Other fillings I’ve tried:

–  Tinted Butter Cream

–  Honey (thicker natural honey will probably be easiest)

–  PB & J (1/2 tsp of peanut butter and then fill it to the top with jam/jelly)

–  Whipped cream and Jam

– Nutella or melted chocolate

  1. They were definitely a winner with the kids (and me ;))

    Nutella is my kryptonite, I had to stop keeping it in the cupboards because everytime I wander through the kitchen I find myself with teaspoon in hand and the nutella jar open (yum!).
