It’s Me Vitamins, Honest! – aka Wholemeal Choc-Chip Cookies

I’m not going to lie, these delectable cookies wouldn’t really fall into the health food category.  They are however pretty passable as far as cookies go.  They are high in fibre and dark chocolate’s good for you, google told me so!

Measurements are given in metric (Aus/UK/NZ) with U.S measurements in brackets

– 150g (2/3 cup) of Softened Butter or Margarine

– 1 egg, lightly whisked

– 175g (1 cup) of Brown Sugar

– 1 teaspoon of Vanilla Extract

– 115g (4oz) of Quality Dark Chocolate (eg. Lindt 70% Cocoa), chopped

– 30g (1oz) of Walnuts, roughly chopped

– 225g (1 + 1/2 cups) of Self-Raising Wholemeal Flour (or add some baking powder instead)

– 35g (1/4 cup) of Flaxseed Meal (alternately just add extra wholemeal flour)

– Pinch of Salt



  • Preheat oven to 180 C (350 F)
  • Line 2 baking trays with non-stick paper
  • Place margarine in a mixing bowl and beat with an electric mixer until smooth
  • Gradually add sugar and beat until pale and creamy
  • Add egg and vanilla, beating until well combined
  • Gently stir in chocolate and walnuts
  • Stir in flour, flaxseed meal and salt until well combined (if batter becomes too difficult to mix you can add a dash of milk to soften or knead with clean hands).  The consistency should be quite firm so if you do add a little milk do it sparingly

  • Roll tablespoons of batter into balls and place on trays leaving 5cm gaps to allow for them to expand

  • Flatten balls gently with fingers or the back of a fork and bake for 15 minutes or until just starting to golden on top (for anyone who hasn’t baked cookies before they harden once removed from the oven so don’t over cook them thinking they aren’t done yet!)
  • Remove from oven and let harden on baking trays for a few minutes before placing on a wire rack to cool

…and if your significant other stumbles upon you downing a couple of cookies at midnight?  Oh honey, I’ve just been taking my fibre and antioxidant supplement.

  1. Ok, now my mouth is watering and it’s only 8:45am! And I actually have flaxseed meal!! That’s not a real common ingredient in US households! I’m makin’ me some cookies!!!!! Thanks for sharing!!


  2. I’ve just noticed I didn’t put self-raising/self-rising flour in the ingredients list…eek! and oops!
    I’ve fixed it up now. Sorry if your cookies ended up a little flat Irene 😦
