Emergency Breakfast Muffins


I whipped these muffins up at 5am this morning when I awoke with a start remembering that we didn’t have enough cereal or bread for the boys to have breakfast (bad Mummy!).

Here’s the recipe.  Super easy and you can substitute whatever you’d like in place of the microwave oats/porridge.  If you’re using something wet like fresh/frozen blueberries then you may only need 3/4 of a cup of milk.

 

Ingredients

  • 2 Cups of Plain Wholemeal Flour (use white if you’d prefer)
  • 1/2 Cup of sugar
  • 1 tbsp of baking powder
  • 1/2 tsp of salt
  • 1 egg
  • 1 + 1/4 Cup of milk
  • 1/3 Cup of vegetable oil
  • 1 tsp of vanilla extract
  • 2 satchets of microwave oats/porridge (I used  apple and blueberry but any flavour will do)

Method

Place the dry ingredients in a large bowl.  Place the wet ingredients in a small bowl or jug and give them a quick stir.  Pour the wet into the dry and stir until just mixed.

Oven  at 200 degrees C or 400 F.  Grease a 12 hole muffin pan or use paper cases.  Divide the batter evenly and place in oven.

Bake for 18-20 minutes or until they spring back to the touch and are lightly browned on top.
