Flour-less Chocolate Muffins


I had a few packets of almond meal (ground almonds) in the cupboard that needed to be used up so I googled and found this gluten-free muffin recipe.  Mine didn’t turn out as pretty as their’s but they’re delicious so I’m okay with it!  The recipe suggests using an electric mixer and if I’d done this I’m sure mine wouldn’t have been bumpy looking…however, I have a strictly spoon only policy for muffin making (with a bit of fork action on occasion) so you can feel free to follow the recipe properly and I’m sure yours will look pretty as a picture!

Flourless Chocolate Muffins

Ingredients

  • 3 eggs
  • 1 cup of sugar
  • 2 cups almond meal (ground almonds)
  • 6 tbsp’s cocoa powder (unsweetened)
  • 2 tbsp’s vegetable oil (I used sunflower oil)
  • 1 tsp baking powder
  • 2 tsp vanilla

Method

  1. Pre-heat oven to 180 degrees C or 350 degrees F.
  2. Grease 12 cup muffin pan or line with papers.
  3. In a bowl beat the eggs and sugar with an electric mixer for 3-5 minutes (this is where my fork skills came in).
  4. Add the vegetable oil and mix well.
  5. Add almond meal, cocoa powder, vanilla and baking powder and mix (I found mine was a little dry and added an extra tbsp of oil at this point).
  6. Bake in the oven for 35 minutes.  My oven runs a little hot so mine were done in 20 minutes.  You may want to keep an eye on them.  Check to see that they spring back nicely when touched in the centre.

The before and after shots really don’t look too different.  This is them before going into the oven.

Here’s the calorie and carb breakdown.  I made mine with a 1/2 cup of Splenda and a 1/2 cup of Caster Sugar so I’ll list both.  I also added an extra tablespoon of oil.  Per muffin figures are rounded to the nearest whole.
