I made banana bread today (and a few other yummy things I’ll save for another post). This loaf was deliciously moist though I think I’ll use a little less sugar next time. It was definitely more banana cake then banana loaf (i.e you feel far less guilty eating half of it in one sitting if it taste’s mildly nutritious). Here’s the original recipe. I only had two bananas so I added 1/2 a cup of apple sauce. I also added vanilla and cinnamon (yummo!). I also used wholemeal (whole wheat) flour and it came out perfectly.
- 3 Bananas
- 1 Egg
- 1/2 cup of butter, melted
- 1 1/2 cups plain (all purpose) flour
- 1 cup sugar
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp vanilla
- 1 tsp cinnamon + a little for sprinkling on top
Pre-heat oven to 350F or 175C. Grease or line a loaf pan with baking paper. Mix all the ingredients together in a bowl until well combined (no need to over mix it…muffin batter consistency is fine). Pour into the loaf pan and place in the centre of the oven.
The recipe says 60 minutes cooking time. Mine started to get a little overly brown at the 50 minute mark. I think our oven may run a little hot! Check by inserting a skewer (or in my case a butter knife) in the centre, it should come out clean.
Cool on a wire rack. I only left mine for 5-10 minutes before slicing a piece off (warm banana bread…mmmm).

I am so desperately going to miss our late morning/early afternoon’s together when James starts full-time school in January. Hanging out with my boy at home is wonderful…particularly now that he’s at an age where he’s very independent (takes himself to the toilet, gets out his own toys and puts them away and can hold a decent conversation with me) and the rules are all tried and tested. It’s like I’ve just managed to perfect my little munchkins behaviour only for his teacher’s to reap the benefits 😉
Oh and I have successfully spotted the bottom of the washing baskets (yes there’s more than one)…and lo and behold what did I find filling up a good portion of them? Teddies and pillows! No wonder they always seemed endlessly full it was all the crap that takes a little more effort to clean and isn’t missed if I don’t get around to them. Pa had been missing for a little while (the cutie wearing the superman costume)…James watched him eagerly getting a ride in the tumble dryer yesterday afternoon and has been snuggling him ever since.
